Mountains of Cheese Please!

There is simply no such thing as ‘too much cheese’, and we’re serious when we say we’ve got mountains of it!

The Chop Shop isn’t your average meat market and deli. Alongside premium, Canadian-raised meats, you’ll find an extensive selection of local cheeses, cured meats and house-made salads – oh, and of course our iconic Green Sauce, which you can read more about here.

The eagle-eyed shoppers amongst you might have noticed our cheese selection has recently got EVEN BIGGER! Specialty fresh cheeses from France, Italy and Spain are landing every day (yes, we really mean landed – they’re fresh off the plane!), and we’re so excited to tell you all about them…

From Comte to Gorgonzola to Manchego…

Straight from the fromageries of France, you’ll find delicious soft cheeses, punchy blues and everything in between on our shelves. Le Chablochon is a soft and creamy cheese with a grassy taste, while Vacherin is delicious baked – all you need is some fresh bread and a locally made chutney and you’ve got yourself your very own slice of heaven. If you’re a blue cheese fan, try the sharp and fruity Saint Agur, or the Roquefort Cantorel for something a little more herby. Meanwhile, the sweet and nutty Comte is the perfect partner to potatoes in a rosti or gratin.

Our Italian cheese offering is every bit as exciting. Use the Gorgonzola Dolce to give your homemade pizzas a twist, and if you’re a fan of truffle, the Truffolina is a must-try – add it to tagliatelle for an indulgent date-night dinner. The Rosso Di Langa is sumptuously supple and gooey, as is the Bosina, while the Rocchetta has a distinctive earthy, wild mushroom-like flavour.

Our Spanish cheeses are enough to get your mouth watering too – think nutty and caramel-y Manchego, goat cheese with red wine and sheep cheeses with rosemary, truffle and brandy.

Did you Know…

Many of these cheeses are marked with either an ‘AOP’ or ‘DOP’ label, which translates to ‘Protected Destination of Origin’. Products with this label are produced, processed and refined in a clearly defined region, helping to ensure the authenticity and quality of the cheese. It’s only the real deal round here!

Pair these delicious cheeses with locally cured meats (we love Four Quarters in Sidney), an artisan chutney (Saltspring Kitchen Co. is a must try), BC made crackers (Gone Crackers are great), some BC grown Bell Peppers and a good dollop of Green Sauce for a feast to remember!
