Parmigiano–Reggiano, also known as Parmesan, is a hard granular cheese that is cooked, not pressed. Parmigiano–Reggiano is made from raw cow’s milk and considered to be amongst the top cheeses by cheese connoisseurs. Also, for this cheese to be called Parmesan, it has to be produced from cows grazing on fresh grass! Come on over to The Chop Shop this Sunday for the cracking of the Parmesan wheel!
